We are currently hiring for a Head Baker

We are looking for a talented, inspirational, knowledgeable organised and passionate baker to become our new Head Baker.

We are a small, steadily growing, award-winning artisan bakery with 3 sites within Edinburgh, we also attend farmer’s markets and have a thriving wholesale offering. We have been running for over 10 years and are considered one of the top bakeries in the city (one magazine has named us as one of the top ten bakeries in the UK). We produce a range of award-winning breads (including up to 8 different sourdoughs), biscuits, cakes and pastries from scratch on our premises, using the minimum of ingredients and no pre-mixes, enhancers, improvers or additives, and time as an essential element.

Starting as soon as possible, the role requires you to lead our growing team of passionate bakers & pastry chefs, maintaining the quality of our offering, keeping the team motivated and energised, and developing new products and processes to drive the business. You will liaise with the owner, and our shop managers to ensure that the right products, at the right quality, are being made. The ideal candidate must have a track record of making and baking high quality bread using natural fermentation processes (our starter is over 20 years old), as well as yeasted, laminated and enriched doughs. Management experience is preferred.

An understanding of numbers and the administration side of business, including managing rota’s, schedules, orders, product GPs and stock control would be beneficial. You will also need to have an understanding of food safety/HACCP.

Pay is negotiable based on experience, however we expect to pay from £12.65/hr night rate £11/hr day rate giving an expected annual salary of £25k+.
